Autumnal Apple Pie
From ‘Recipes for Autumn Souls Vegan Comfort Food‘ – with kind permission
Ingredients:
Crust:
200g Butter
200g Caster sugar
400g Flour
1 tbsp Ground flax seed
3 tbsp Water
Filling:
3-4 Large cooking apples
100g Brown sugar
¼ tsp Nutmeg
¼ tsp Ginger
¼ tsp Mixed Spice
1 tsp Cinnamon
1 tbsp Cornflour
3-4 tsp Butter
Directions:
To make the crust, combine dry ingredients together.
Stir flax seed and water together to form a paste and add it to the dry ingredients.
Mix all of the ingredients together well and form a dough.
Refrigerate for at least 1 hour.
For the filling, leave apples, sugar and spices in bowl for as long as possible, overnight is best.
Add fruit to pie crust.
There will be juice from the fruit left in the bowl, add cornflour to make a sauce and pour it over apples.
Add butter to the fruit before rolling out crust topping and place on the pie.
Bake at 180 for 35-40 minutes.
