Blackberry Coulis

Ingredients:

350g Blackberries
50g Caster sugar
100ml Water
1/2 tsp Vanilla essence

Directions:

Add berries and sugar to water in a pot.
Slowly boil.
Once boiled, simmer for 5 minutes on a low-medium heat until the mixture is soft.
Stir in vanilla essence.
Allow the mixture to cool and then pour it in a food processor, making a purée.
Strain the purée through a sieve.
Can be served warm or cold.
