Bubble and Squeak Cakes

Ingredients:
500g potatoes
70g kale
1 medium onion
1 tbsp olive oil
2 tbsp plant based butter
Salt and pepper
Directions:
- Peel and cut the potatoes into large chunks. Boil until soft enough to mash, 10-15 mins should do it.
- While potatoes are boiling roughly chop the kale (remove stalks) and finely dice the onion.
- Sauté the onions in olive oil on a low heat. This should take around 10 minutes. If the onions start to brown add a splash of water to the pan. The onions should be soft and translucent, rather than brown.
- Add the kale to the cooked onions and sauté until wilted.
- Drain the cooked potatoes and mash with the pant based butter. Once smooth, add the kale and onions, season with salt and pepper and allow to cool.
- Shape the mixture into four equal size patties, around 1/3 inch thick. Gently pan fry, on both sides until golden brown. (Alternatively place in the oven at 180c for 15 mins).
