Christmas Cake

Ingredients:

500g self raising white flour
200g sugar
Up to half a litre soya milk
8 tbsp vegetable oil
4 tsp vanilla essence
800g mixed dried fruit
100 g chopped mixed peel
150 g glacé cherries halved
100 g blanched almond chopped
2 tsp mixed spice
3 tbsp brandy or whiskey (optional)

 

Directions:

Mix flour and sugar in a bowl.
In another container mix oil and milk and essence and whisk.
Combine wet and dry ingredients and mix.
Stir in all other ingredients.
Place in a lined cake tin.
Cook at 150C for 2 to 3 hours depending on oven.
