Smokey Black Beans

Ingredients:
400g can black beans (rinsed and drained)
400g can chopped tomatoes
1 medium onion (finely chopped)
2 cloves garlic (minced)
1 tbsp olive oil
2 tsp smoked paprika
1 tsp ground cumin
1/4 tsp cayenne pepper
1 tbsp tomato paste
1 handful chopped fresh parsley
Salt and pepper
Directions:
Heat the olive oil in a pan. Sauté the onion and garlic, on a low heat until softened.
This should take around 10 minutes.
If the onions start to brown add a splash of water to the pan. The onions should be soft and translucent, rather than brown.
Add all other ingredients (except the parsley), stir and simmer for 10 minutes.
Add the fresh parsley and serve straight away.
