Spaghetti with Tomato and Basil
Ingredients:
320g spaghetti
500g ripe tomatoes
2 cloves of garlic
Olive oil
Salt (approximately 21g), for pasta water
Salt, to taste
Black pepper, to taste
Fresh basil
Directions:
1. **Prepare the ingredients:** Bring a pot of water to a boil for the spaghetti. Add about 21 grams of salt to the boiling water. Meanwhile, wash the tomatoes and dice them. Finely chop the garlic and heat a pan with a bit of olive oil over medium heat.
2. **Prepare the sauce:** Add the chopped garlic to the hot oil and let it sauté for a moment without burning. Add the diced tomatoes and cook over medium-low heat for about 15-20 minutes until a thick sauce forms. Season with salt and pepper.
3. **Cook the spaghetti:** Add the spaghetti to the boiling salted water and cook according to the package instructions for an al dente texture. Drain the spaghetti, reserving some of the cooking water.
4. **Finish the dish:** Combine the cooked spaghetti with the prepared sauce in the pan and mix well over medium-low heat for a couple of minutes. If needed, add some of the spaghetti cooking water to better combine everything.
5. **Serving:** Plate the spaghetti with tomato and basil, adding fresh basil leaves on top of each dish before serving.
