Christmas Pudding

Makes 3 puddings
Ingredients:
700g dried fruit
100g mixed peel
100g chopped almonds
200 g breadcrumbs
150 g self raising flour
1 tsp nutmeg
2 tsp mixed spice
Grated rind and juice of one lemon
300 g sugar
4 tbsp brandy or whiskey (optional)
200 g vegetable margarine
100 ml plant milk
Directions:
Mix flour, sugar, spices.
Add melted margarine.
Add all other ingredients.
Mix throughly.
Place in pudding bowls.
Place bowls in steamer and cook for 6 hours.
Make sure steamer doesn’t dry out.
Store for a month.
Steam for an hour before serving or microwave.
